Luke Larsson is the Head Chef and Co-Owner of Khao Bird, where he draws inspiration from his travels across Thailand and his love of Northern Thai flavours.

After developing his style through catering apprenticeships in the UK and travelling through South East Asia, Luke returned to launch the Lucky Khao pop-ups with Mike Palmer in Brighton. In 2024, the pair opened Khao Bird at Borough Market’s Globe Tavern, taking cues from Chiang Mai’s street food scene. Its success led to the opening of Khao Bird Brewer Street, the brand’s first permanent Soho restaurant last year.

Guests can expect a sharing menu rooted in the flavours of Northern Thailand, with dishes including Raw Beef Laab, Bass Crudo with Gooseberry and Thai Basil, Burmese Mutton Curry, and Hung Ley Curry with Pork Belly and Pineapple.
